Healthy oatmeal raisin cookies are lightly spiced with cinnamon and nutmeg. The raisins add sweetness and give them a chewy texture. They're a good alternative to shop-bought cookies as they're low in fat and don't contain any food additives.
The recipe uses applesauce as a substitute for sunflower oil, which makes the cookies taste sweeter and lowers their fat content. If you don't want to buy applesauce you can make your own - peel and chop some cooking apples then stew them in a little water until they're really tender. Mash them up with a fork or use a blender to get a really smooth sauce. You could use different types of fruit instead of apples, such as prunes or apricots.
Healthy oatmeal raisin cookies are great to put in lunch boxes instead of chocolate bars as they're sweet without having a high sugar content. To make your cookies last longer try doubling the quantities and keeping some in the freezer.
Healthy Oatmeal Raisin Cookies
Ingredients 115g/1 cup whole wheat flour 175g/1 ½ cups of porridge oats (oatmeal) ½ tsp baking soda ½ tsp baking powder ½ tsp salt 1 tbsp cinnamon ½ tsp nutmeg 150g/½ cup liquid honey 125ml/½ cup applesauce 1 egg 1 tsp vanilla essence 75g/½ cup raisins 115g/½ cup walnuts, chopped
Method
Heat the oven to 160C/325F/Gas mark 3. Line two baking trays with baking parchment.
Put all the ingredients into a large bowl and mix together. The mixture is quite wet so don't worry if yours looks runny.
Place teaspoonfuls of the mixture on to your baking trays. Press each cookie down lightly with a fork so they cook evenly.
Bake for 12-15 minutes until the cookies are golden brown.
Healthy oatmeal raisin cookies are a delicious snack that are great as part of a healthy diet.
