Fragrant and moist this easy healthy banana bread recipe makes a delicious low fat snack - you can enjoy cake as part of a healthy diet.

This low fat recipe really is a healthy food, and the banana bread is great for snacks, lunch boxes or desserts. It's also a brilliant way to use up bananas which are verging on becoming over-ripe and too squidgy to eat - these ones have an especially intense flavour and mash down easily to add to your cake batter.
I used four very ripe bananas to make this recipe and the fruity aroma came wafting from the oven as it cooked. It almost tastes like a vanilla cake, because it's so full of fragrance and flavour.
This banana bread doesn't contain any fatapart from what occurs naturally in the walnuts, it's all been replaced with apple puree (applesauce). To make apple puree, peel, core and slice cooking apples such as Bramleys. You need 3-4 to make 2 cups of applesauce. Place in a pan with some water and cook gently until the apples are soft enough to mash to a pulp. Store for up to a week in the fridge, or freeze in an ice tray to use as needed for baking.

Healthy Banana Bread
Ingredients 90g/¼ cup apple puree (applesauce) 130g/½ cup unrefined caster (superfine granulated) sugar 1 large egg, beaten 250g (2 cups) plain (all-purpose) wholemeal flour 2 level tsp baking powder 4 ripe medium-size bananas 50g/¼ cup chopped walnuts
Method
Grease and base-line a (1-lb capacity) loaf tin, measuring 8.5x19cm. Pre-heat oven to 350F/180C/gas 4.
Put the apple puree, sugar and egg in a bowl. Add the flour and baking powder and mix all together, using an electric mixer. Don't worry if the mix looks dry and crumbly at this stage.
In another bowl, mash the bananas to a pulp. Add bananas and walnuts to the flour mixture and combine well.
Spoon the mixture into the prepared tin. Depending on the size of the bananas, you may have a little too much mixture to fit comfortably into the loaf pan - if so, put any excess into muffin tins and bake for 15 mins alongside the banana bread.
Bake for 45-50 mins until well risen and browned on top and a skewer inserted in the center comes out clean.
Leave in the tin to cool for 10-15 mins before turning out on to a wire rack.
This healthy banana bread is delicious warmed and makes healthy mid-morning snack.
