Healthy Pumpkin Cookies - Tasty in a Healthy Diet

These healthy pumpkin cookies are great to have as a snack when you're keeping to a healthy diet.



These cookies are perfect for Halloween as they're easy to make and taste delicious - you could double the quantities if you're having family and friends round.

This recipe uses pumpkin puree that you can either buy from the shop or make yourself. Remove the skin from your pumpkin - you'll need a really sharp knife to do this as the skin is tough to cut through.

Cut the pumpkin flesh into chunks and cook down in a pan with a little water over a medium heat. When the flesh has softened, mash it up with a fork or use a blender for a really smooth texture.

A small pumpkin will make roughly 2 cups of puree. If you can't get pumpkin, using butternut squash works just as well.

Healthy pumpkin cookies use cinnamon and nutmeg - try adding ½ tsp of cloves for extra spice and a handful of chopped walnuts for a crunchy texture.

The pumpkin is used instead of fat and sweetens the cookies which means they don't use butter and use less sugar than other cookie recipes. For a healthy dessert, top a cookie with a spoonful of natural of yoghurt and scatter a few nuts on top.



Healthy Pumpkin Cookies

Ingredients
250ml/1 cup pumpkin puree
2 egg whites, whipped
150g/1 cup brown sugar, packed
175g/1½ plain (all-purpose) flour
1 tsp baking soda
1 tsp cinnamon
1 tsp nutmeg
270g/3 cups porridge oats (oatmeal)
150g/1 cup raisins

Method

  1. Heat the oven to 180C/350F/Gas mark 4. Line two baking trays with baking parchement.
  2. In a large bowl, fold the pumpkin into the egg whites.
  3. In a separate bowl mix together sugar, flour, baking soda, cinnamon, nutmeg, oats and raisins.
  4. Fold the dry ingredients into the egg and pumpkin mixture
  5. Place teaspoonfuls of mixture on to the trays and bake for 15 minutes until golden brown.

These healthy pumpkin cookies are a great snack as part of your healthy diet.
