Vegetarian Sandwiches

How to make healthy vegetarian sandwiches with delicious meat-free fillings.




There are lots of possibilities for a vegetarian sandwich, so non-meat eaters needn't feel deprived.

  • Cucumber Sandwich A real delicacy, the cucumber tea sandwich is simplicity itself to make. Traditionally made with thinly sliced white bread, crusts removed, you can make your cucumber sandwiches more substantial and healthier by using wholemeal bread instead.

    The flavour of butter really complements the cucumber, but spread it very thinly, or use a low fat, oil-based spread if you prefer.

    Slice the cucumber, peeled if you wish, into thin slices, arrange in a single layer on the bread and top with a second slice. Cut into triangles and serve immediately.

  • Peanut Butter Sandwich Peanut butter is delicious in a seeded roll or in hearty wholegrain bread, and you don't need any other spread on the bread (although you can use a spread if you wish).

    Peanut butter sandwiches need extras if they're not to be dry, so pack in generous amounts of salad leaves, tomatoes and cucumber.

  • Peanut Butter and Banana Sandwich Kids love this one, and so do adults. Spread peanut butter over your bread - not too thick a layer, as this is a very high-fat food. Add sliced banana on top. Best served immediately, as banana turns brown and unappetising soon after slicing.
  • Egg Salad Sandwich You can use the eggs sliced or mashed, in an Egg Salad Sandwich.
  • Avocado Sandwich Avocado is delicious in chunky wholemeal bread, with the addition of tomato, herbs, leaves, and a dash of lemon dressing.

    Avocado is very nutritious, but high in fat, so don't have this one too often if you're watching your weight as it packs a lot of calories. Try to make it just before eating, as avocado browns easily when exposed to the air.

  • Watercress Sandwiches The peppery flavour of watercress is perfect in a sandwich, so make the most of it when it's in season. Watercress has enough flavour to stand alone as a sandwich filling. Wash well, and chop it before making your sandwich, especially the stalks, otherwise it can be hard to eat.
  • Fish Sandwich Fillings Many vegetarians also eat fish, so consider tuna salad, salmon, smoked salmon, sardines, crab, prawn or shrimp for your healthy vegetarian sandwich recipes.
