This turkey meat loaf recipe is a great, healthy variation on a well-loved family favourite. Minced (ground) turkey is widely available, and you can use it in many recipes as a substitute for beef. You need to use plenty of flavourings, because otherwise turkey can be rather bland. It's also a very lean meat, so the meat loaf mixture needs to be quite moist, so that the loaf isn't dry.
You can use turkey on its own in this recipe, but you'll find the flavour is better if you use some sausage meat as well. Even a couple of crumbled sausages help to make the texture firmer, and add flavour.
If you want to make a small loaf, to feed four people for one meal, halve the quantities given here. This turkey meat loaf recipe is so good cold, though, that it's well worth making a large loaf, and serving it sliced with salad and baked potatoes the following day.
TURKEY MEAT LOAF RECIPE
Serves 8 Preheat the oven to 180C/350F/gas 4. Put 900g (10 cups) minced (ground) turkey in a bowl. For extra flavour, substitute good quality sausage meat for some of the turkey.
In another bowl, crumble 2 thick slices of bread. Soak the bread with a mixture of soy sauce, tomato puree and brown sauce, or any other well-flavoured sauce you have.
Mix the bread and meat thoroughly. Add 1 tsp dried mixed herbs, and season. Bind the mixture with 2 beaten eggs.
Pile the mixture into a 2 lb loaf tin and smooth the surface. Bake for about an hour, until top is well-browned, and the sides are shrinking away from the tin.
Serve with fresh vegetables, rice or potatoes and a tomato sauce.
