Simple Healthy Supper Idea

A friend just emailed me forlornly...'any healthy eating ideas for the weekend...I can't think what to cook'.
My reply?
'Cook up some ratatouille, just sliced onions, courgettes (zucchini) and lots of red and yellow peppers, I roast them first for better flavour, but you don't have to...and canned tomatoes. Garlic, a few herbs. Keeps well, and you can have with pasta, rice, cous cous, by itself, with cheese on top, or a poached egg - or with a bit of chicken or fish if you want something more substantial...'
