Quorn is made from mycoprotein, a type of fungi. As a meat substitute, Quorn has lots of advantages and makes a great addition to your diet if you're trying to eat less meat.
Quorn is low fat, high fibre and contains zero cholesterol. It's quick and easy to cook, and you can use it straight from frozen.
The texture of Quorn is quite similar to meat, but it doesn't have as much flavour, so you'll need to use plenty of additional flavourings when you cook it. Give it a go, with these simple Quorn recipes, perfect for midweek meals.
2 tbsp Spanish olive oil 6 Quorn sausages cut in to slices on the diagonal (if using frozen sausages, allow to defrost for 30 minutes at room temperature until soft enough to slice, then continue cooking from frozen) 2 onions, thinly sliced 2 cloves garlic, finely chopped 1 red pepper & 1 green pepper, diced 100g (1/2 cup)sweetcorn 1 tbsp smoked paprika 2 tsp mild chilli powder 100ml (scant 1/2 cup) sherry or red wine 1 x 400g (14 oz) can chopped tomatoes 1 x 400g (14 oz) can broad beans or cannellini beans, drained 150ml (2/3 cup) vegetable stock salt & freshly ground black pepper to taste 1 bunch flat leaved parsley, finely chopped
Method
Heat half the oil in a large frying pan and cook the slices of sausage until lightly browned. Remove from pan.
Add the remaining oil and cook the onions and garlic until softened. Add the peppers and cook for a few minutes, adding a little water if necessary to prevent sticking. Stir in the sweetcorn, paprika and chilli powder and cook for a few minutes. Stir in the sherry or wine.
Add the tomatoes, beans and stock. Return the sausages to the pan and season to taste.
Cover and simmer for 10 minutes. Scatter over the chopped parsley and serve with boiled rice.
1 tbsp olive oil 1 onion, thinly sliced 2 garlic cloves, crushed 1 carrot, finely chopped 2 x 400g (14 oz) cans chopped tomatoes 2 tbsp red or green pesto 4 tbsp tomato purée 1 pack Quorn Mince (Quorn Grounds) 2 tsp dried oregano 350g (1 lb) dried spaghetti shaved Parmesan and torn fresh basil leaves to serve (optional)
Method
Heat the oil in a pan and soften the onion and crushed garlic until soft, then add the finely chopped carrot. Cook for 5 minutes.
Add the tomatoes, pesto, tomato purée, Quorn Mince (Quorn Grounds) and oregano, stir well, bring to the boil and simmer for 15 minutes.
While the bolognese is simmering, cook the spaghetti according to the pack instructions.
Drain the spaghetti, place in a serving bowl, pour the bolognese sauce over the spaghetti, fork through and serve. Scatter over shaved Parmesan and torn fresh basil leaves if you wish.
