Oven-fried Fish Recipe

Make this oven-fried fish recipe next time your family are asking for deep-fried fish. It's much healthier.
These are like fish fingers, but without the bright orange breadcrumbs! Oven-frying is a really healthy way of cooking, because unlike conventional frying, it uses little or no fat, yet the results are just as crispy and appetising. These fishy bites are quick to put together and children love them, so they’re a useful way of slipping a bit more fish into the weekly menu.

Oven-fried fish Salmon is a good choice, as it’s an oily fish, full of omega-3 oils which are an important part of a healthy diet because they’re so good for the heart.

OVEN-FRIED FISH RECIPE

Serves 4 Heat the oven to 350F/180C/gas 4. Cut 4 skinned salmon fillets into strips. Mix 85g (3/4 cup) wholemeal breadcrumbs (easily made in a food processor or sturdy blender) with 2 tbsp finely chopped parsley and 50g (1/2 cup) grated cheese. Parmesan is the best, but you can use Cheddar or any other hard cheese you have. Spread this mixture on to a plate. Beat 1 egg, and spread 50g (1/2 cup) flour on to another plate. Dip each fish slice first into the flour, then into the egg, and finally into the breadcrumbs to coat. Place fish on a lightly oiled baking tray and cook in the oven for 15 minutes until the fish is cooked.
