Healthy Soup Recipe

4 December 2009 Don't throw away the green tops of leeks. They can be a bit tough for using in dishes on their own, but wash them well, cut off any dried bits, shred finely with a sharp knife and use them in soups. Stew gently in a little olive oil to release their sweetness, add stock, diced potato and any other veg you have, simmer until the veg are softened and process - and voila, a nourishing, cost-effective healthy soup.

Add potato peelings

My granny use to wash potato peelings and put those in the soup pot as well. All the vitamins are right under the skin, so you're not throwing them away.
