I turn to my list of healthy soup recipes all the time, and love adding new variations. Soup is a great healthy choice, and when you've been eating a lot of foods that are richer than usual, it's great to settle down to a simple bowlful of goodness.
I just made a lovely leek and potato soup from start to serving in 25 minutes. Here's how:
Trim, wash and shred 3 leeks. Scrub one large potato and dice, leaving the peel on. Place in a large pan and cover with boiling vegetable stock - about 3-4 cups. Bring to a simmer, cover, and cook for 15 minutes, until the potato is softened.
Process or blend, and if the puree is too thick, thin it down with more stock or skimmed milk. Season with pepper (you won't need salt if you've used stock powder or a cube, because there's enough salt in those already), sprinkle over some chopped parsley if you have it, and serve.
