Healthy Fish Recipe

I've just been prepping a lovely healthy fish recipe to serve to friends tonight - and the flavours in this recipe are so rich and herbal that when I opened the door to the post lady she sniffed the air and asked if I was cooking a meat stew?
The key to the aroma lies in crushing the herbs to release their full pungency. I took two sprigs of fresh rosemary, four sprigs of fresh thyme and two large bay leaves from my pots of herbs, stripped the leaves of the twigs and placed in a pestle with a little salt. Crush the herbs to break up the leaves and release their scent, mix with 2 tbsp olive oil and the juice of half a lemon.
Take one leek per person, wash carefully and slice across into chunks. Steam or boil for a couple of minutes to soften slightly. Place in a bowl with one fillet of white fish per person - look for sustainable varieties - your fishmonger can advise. Pour over the marinade, toss with your fingers, cover, and leave in the fridge until you're ready to cook - up to 24 hours, as the long as the fish was really fresh when you bought it.
Heat the oven to 200C/400F/gas 6. Lightly oil a baking tray and heat in the oven for 5 minutes. Place the fish and vegetables on the heated tray, and pour over any remaining marinade. Take one rasher of smoked streaky bacon per person and trim off the fat from the edge. Snip each rasher into two and place on top of the dish. Bake for around 15 mins - keep an eye on it, as the fish cooks quickly. Serve with boiled wholegrain rice, or mashed potato.
