Healthy Burger and Chips

Yes - burger and chips can be healthy!!!

1lb lean minced beef
1 medium onion
2 eggs
pinch of thyme
tbsp of tomato puree
1 beef oxo cube crumbled
2tbsp worcestershire sauce
salt and pepper to taste
plain flour
4 medium carrots
4 medium parsnips

Combine in a large bowl all the ingredients apart from the carrots and parsnips, and then refrigerate for 30 mins.

Whilst refrigerating burger mix, peel, wash and chop parsnips and carrots into 'chip' shapes.

Place on a baking sheet and spray lightly with spray olive oil.

Bake at 200C/400F/gas 6 for 30 mins approx depending on size of 'chips'.

Remove burger mix from fridge and shape using your hands into patties - using flour to stop them from sticking,
Then place under a hot grill for 8-10mins each side turning once.

Serve with your healthy chips and ketchup!
