This is a very versatile recipe which I make every year when I have runner beans in the garden. It’s unusual, and makes a great addition to any repertoire of vegetable recipes. It’s so important to be able to try something different, when you’re trying to get your five portions of fruit and veg a day.

The recipe works just as well with French beans and fine beans. The mix of coriander, cinnamon and lemon gives it a really lovely flavour, that becomes more intense if you cook the beans the day before you want them, and leave overnight.

You can serve it as an accompaniment with grilled chicken, pork or fish. I also sometimes adapt this green bean recipe into a vegetarian sauce for pasta, by mixing it with some canned borlotti beans and a couple of spoonfuls of pesto.

FRAGRANT GREEN BEAN RECIPE

Prepare 500g (2 ½ cups) beans by topping, tailing and removing strings. Cut into 2.5cm pieces. Cook 2 chopped onions in olive oil until tender, add the beans, lower the heat, and leave to cook gently for 5 mins. Add 3-4 large crushed cloves garlic, a bunch of chopped fresh coriander, ½ tsp ground cinnamon, ½ tsp allspice, 1 tsp flour and 150ml (1/2 cup) water, stir well, bring to the boil, cover and simmer for 15 minutes until the beans are tender. Stir in 2 tbsp lemon juice and season to taste.
