This is the best and easiest fresh apple cake recipe I've ever baked. It's very quick to put together by simply adding the ingedients to the bowl in stages, and mixing well.
It's very satisfying to add lots of juicy raw apple to this cake, and the fresh fruit makes the texture lovely and moist. The warmth of cinnamon adds a pleasant touch of spice while a coconut topping creates an appetisingly crispy finish.

Ingredients
250g/9 oz/generous 2 cups self-raising flour 1 tsp baking powder 1-2 tsp ground cinnamon 100g/4 oz/two-thirds cup moist light brown sugar 175g/6 oz/1 cup sultanas 125ml/4 fl oz/half cup sunflower oil 2 eggs 125ml/4 fl oz/half cup apple or orange juice 2 medium-sized juicy eating or dessert apples 2 oz/55g/two-thirds cup desiccated coconut

Method
Heat the oven to 180C/350F/gas 4. Grease and base-line a 23cm/9 inch diameter round cake tin.
Sift together the flour, baking powder and cinnamon into a large bowl.
Stir in the sugar and sultanas. Make a hollow in the middle of the dry ingredients, and pour in the beaten eggs, oil and juice.
Mix the wet ingredients into the dry ingredients, using a wooden spoon.
Use a hand-held grater to grate or shred the fresh, unpeeled apples.
Stir the fresh apple into the cake mix (batter).
Pour the batter into the cake pan and sprinkle over desiccated coconut to cover. Bake for around 45 minutes, until a toothpick inserted into the centre of the cake comes out clean.
Allow to cool in the tin for 10 minutes, then remove from tin and leave to cool on a wire rack.
