Easy Healthy Meal Ideas

Loads of great easy healthy meal ideas were submitted in our competition. Here's a selection.




Many of you opted for fish as the main course, preferring salmon. Tuna, coley and king prawns were also nominated.



Chicken and turkey also featured, in a range of simple recipes. Always buy the best quality poultry you can afford, and cut down on portion sizes if necessary, adding more vegetables instead. Only one entrant used meat, in a healthy shepherd's pie recipe, and there was just one vegetarian suggestion.

None of these easy healthy meal ideas would be complete without a dessert, and most of you went for fruit-based ideas. Thanks to all who entered, and shared your easy healthy meal ideas. Here's a selection of the best.

Winner, drawn at random, was Jane who suggested this meal:

  • Pink grapefruit
  • Grilled salmon served with leeks, mashed swede and green beans dressed with a dash of soy sauce
  • Blueberry pavlova

Your meal plan was excellent - just go easy on the sugar in the pavlova meringues, and consider dressing the blueberries with yogurt, rather than whipped cream.

EASY HEALTHY MEAL IDEAS - MAIN COURSES

Fish
  • Grilled tuna steak with salad
  • Salmon with asparagus and steamed new potatoes
  • Baked coley served with roasted Mediterranean vegetables seasoned with balsamic vinegar and garlic
  • Grilled salmon dry-marinated with herbs and pepper. Broccoli/cauliflower/sugar snap peas sauteed with garlic, whole grain cous-cous and wild rice.
  • Steamed salmon on a bed of red pepper sauce with steamed spinach and sweet potato
  • Grilled (broiled) salmon with brown rice and steamed Asian vegetables with sesame oil dressing
  • Salmon fillet baked withonion, garlic, cherry tomatoes and chilli, served with sweet potato mash
  • Tuna steak, vegetable cous cous and corn on the cob
  • King prawns grilled (broiled) and served on rice noodles with stir-fried vegetables, dressed with a little melted cheese

Turkey and chicken
  • Turkey casserole with tomatoes and sweetcorn
  • Turkey curry and rice
  • Turkey tortilla wraps with baked potatoes
  • Chicken breast topped with a slice of mozzarella and grilled (broiled) until the cheese is browned, served on a bed of wilted spinach
  • Grilled chicken breast with Caesar salad
  • Sweet and sour chicken with brown rice
  • Pittas stuffed with grilled chicken and salad
  • Chicken breast sauteed in olive oil, mashed potatoes and steamed broccoliv

Meat
  • Shepherd's pie topped with a mix of mashed swede and carrot

Vegetarian
  • Stir-fried vegetables - beansprouts, onions, mushrooms, baby sweetcorn
  • Quorn curry with brown rice

EASY HEALTHY MEAL IDEAS - DESSERTS

  • Fresh fruit salad was the most popular dessert nominated
  • Mixed sliced strawberries and bananas, topped with light strawberry yogurt
  • Lemon or cranberry sorbet
  • Fruit-filled pancakes
  • Jello parfait - jello (jelly) layered with fat free yogurt, with granola sprinkled between layers. Top with more granola and sliced strawberries
  • Low fat chocolate mousse and fresh pears
  • Fat-free yogurt topped with stewed bananas, sprinkled with slivered almonds and goji berries
  • Grilled pineapple slices with raspberry sorbet
  • Banana topped with low fat Greek yogurt, pine nuts and chocolate shavings
