Delicious tomato sauce for pasta

Down at the greengrocer on Sunday, they were selling off slightly squishy tomatoes. You can't eat tomatoes like this raw, but they are great roasted, then processed to make a fresh tomato sauce.

I add a good dash of balsamic vinegar and plenty of herbs to bring out the flavour. Here's the recipe for my Deeply Delicious Tomato Sauce.

Can you use cherry tomatoes?

Bought a whole punnet on special offer last week...they're going soft now, would they be ok in this recipe?

Yes, Jo, you can use up your cherry toms in this recipe. Cut them in half, and arrange in a single layer on the baking tray. Cut your onions quite finely, as the tomatoes won't take as long to cook as the larger ones. Give them 20 mins in the oven, then check them until soft and slightly charred at the edges.
