Do you love chocolate mousse, but think it's too heavy on fat to be worth making? Not true. The trick is to pick the right kind of low fat recipe.

There are lots of different ways to make a chocolate mousse. Some recipes simply blend melted chocolate with whipped cream - that makes a very luscious, rich mousse, but one that's strictly for special occasions. For a lighter, healthier version, try this cream-free recipe, which uses whipped egg whites to give the mousse volume.

Choose the chocolate you use with care. Dark, organic chocolate, with a high percentage of cocoa solids is the best choice, and much better for your health than oversweetened milk chocolate. Find out more about the chocolate facts here.

CHOCOLATE MOUSSE RECIPE

  • Serves 4-6 Melt 100g (4 oz) dark chocolate in microwave, or by placing in a bowl over a pan of simmering water. Stir until smooth and leave to cool.
  • Whisk together 50g (1/4 cup) caster sugar and 2 eggs, and stir into the cooled chocolate.
  • Whip 4 egg whites until they hold soft peaks, then fold through the chocolate mixture. Spoon into small glasses or ramekin dishes and chill for an hour before serving.
