Chicken Salad Sandwich Recipe

This chicken salad sandwich recipe makes the best chicken salad sandwiches you'll ever taste, and has loads of variations.




Custom-make your own healthy chicken salad sandwiches, using these ideas.

Bread
The healthiest option is wholemeal bread or rolls. You can also try the chicken sandwich filling in a French stick, a bap, piled on to a toasted muffin or popped into a warmed pitta bread - wholewheat pittas are healthier than plain white.

Chicken
To make the best chicken salad sandwich, avoid sliced, pre-packaged chicken. This meat may come from caged birds, and the cheaper varieties will have been processed and water and other additives included. Check the ingredients - cooked meats like this are often high in salt, and, surprisingly, sugar.

Much better for your healthy sandwich is either to use slices from a good quality chicken that you have roasted yourself, or to take fresh chicken breast and cook it from scratch.

If you use raw chicken breasts for your chicken sandwich, remove the skin and traces of fat and slice the breast into slender slices. You'll need one small breast per person. You can cook the chicken in a heated griddle, or use a little oil in a non-stick frying pan. Brown the slices and cook until just white right through - don't overcook, or the meat will become tough.

You can also cook your chicken in the oven, simply slice the chicken breasts and place on an oiled baking tray, brush lightly with oil, sprinkle with herbs if you wish, and cook in a pre-heated oven, 180C/350G/gas 4 for around 10 minutes, checking with the point of a knife to make sure the meat is thoroughly cooked.

You can use warm or cold chicken in your sandwich.

Salad
Add a selection of shredded lettuce, sharp-flavoured leaves like rocket, thinly sliced cucumber, or cucumber chunks (good in pitta), sliced tomato (choose vine-grown for best flavour), and finely sliced red pepper. If your sandwich is destined for a lunch box, avoid wet salad ingredients like cucumber, which could turn soggy.

Extras
Try these variations on your chicken salad sandwich recipe:

  • Add chutney, pickle or mayo

  • If you're cooking the chicken freshly, marinade it in lemon juice with a dash of oil, a pinch of ground cumin and some chopped fresh coriander (cilantro) before cooking.
