Butternut Squash Soup Recipe - For Your Healthy Diet

If you want to eat a healthy diet, you can't do better than try some easy homemade soup recipes. Packed with fresh veggies and low in calories, simple soups are quick to make and taste fabulous.
Butternut squash makes a beautiful golden soup, with a surprisingly sweet flavour. It takes a few minutes to prepare the ingredients, because the butternut has a tough outer skin which can be hard to remove.
Try slicing off the top and bottom of the squash, then slicing it in two across the thinner 'neck' part. Hold half a squash firmly upright on a chopping board and using a very sharp knife, pare off the skin from top to bottom. Cut the flesh into dice. Squash cooks very quickly, so the pieces don't have to be too small.
Butternut squash has more flavour than some other squashes, but the soup is still improved by adding other flavours. This recipe uses ground cumin but there are many other herbs and spices which would also marry well.
Try adding garlic, ground coriander, a pinch or two of smoked paprika, a scattering of chilli flakes. You can make the soup as spicy or as comfortingly bland as you like.
Butternut Squash Soup Recipe
Ingredients 900g/3-4 cups butternut squash, peeled, seeded and diced 1 onion, peeled and diced 1 tsp ground cumin 1 tbsp olive oil ½ litre/ 2 ¼ cups vegetable or chicken stock 1 tbsp chopped fresh coriander (cilantro) to garnish
Method
Heat the oil in a pan and soften the onion.
Add the cumin and stir for a few moments. Add the squash and the stock.
Bring to the boil then reduce to a simmer and cook for around 15 minutes until the squash is tender.
Puree the soup in a blender. If it's too thick, add more stock or water. Garnish with chopped fresh coriander (cilantro).
