We love this banana nut bread. It's childs-play to make and the wholemeal flour with a touch of oatmeal gives it a good, firm texture that's easy to slice. This easy banana bread recipe has a flavor that's nicely spicy, but the bananas still come through. There's a pleasant hint of brown sugar in there as well, although because the bananas are sweet in themselves this recipe doesn't use an enormous amount. Chopped walnuts provide a very moreish crunch. All in all, this is a great recipe for an everyday cake that works well in lunch boxes or as a snack with a cup of coffee or tea. You can butter it lightly or serve it plain, the choice is yours.
BANANA NUT BREAD RECIPE
Makes about 10 slices.
INGREDIENTS 175g (1 cup) wholemeal flour 50g (1/3 cup) medium oatmeal 100g (1/2 cup or 1 stick) softened butter 100g (2/3 cup) dark muscovado sugar 2 tsp baking powder 1/2 tsp ground cinnamon 2 eggs, beaten 4 small ripe bananas, peeled and mashed 100g (1/2 cup) chopped walnut pieces
METHOD Preheat the oven to 180C/350F/gas 4. Grease and base-line a 1kg/2 lb loaf tin/pan. Place all ingredients except the bananas and nuts into a large bowl and beat together using an electric hand whisk until well combined. Carefully stir in the bananas and walnuts until just combined. Pour the mixture into the cake tin/pan and bake for approx 1hr. Check half-way through the cooking time and if the cake is browning too much, cover with foil. Test for doneness by inserting a skewer into the center of the cake. It should come out clean if the cake is done. Leave the cake to cool for 5 minutes, then remove from the tin, peel away the paper and finish cooling on a wire rack.
