Reader's Recipe: Savoury Lentils

A big thank you to Cristina for sending me delicious this recipe, which is very suitable for the cool late spring weather we're having here in the UK. I found that the flavours in this recipe developed well, and it was particularly tasty the day after it was made.

Ingredients

175g (6 oz, 1 cup) lentils - green are good
3 tbsp olive oil
chopped vegetables as available: onion, carrot, garlic, leek, celery or any other well-flavoured veg
1 tsp plain or smoked paprika
500ml (18 fl oz, 3 cups) water

Serves 3-4

  • Soften the chopped vegetables in the oil for a couple of minutes.
  • Stir through the paprika.
  • Add the lentils and stir well.
  • Pour over the water, bring to a very slow simmer and cook until the lentils are tender. Check frequently, and add more water as needed.

These lentils are delicious warm or cold, as an accompaniment to chicken or fish, or in a salad. You could also add them to soups or pasta sauces, or enjoy just by themselves. They keep will in the fridge for 4-5 days, and you can also freeze them.
