Your Healthy Dinner Ideas
I know that a lot of you are short of time, and sometimes low on inspiration - you'd like to eat more healthily, but you tend to go back to unhealthier foods when you need a meal or a snack in a hurry.
What's great, though, is that so many of you do have a repertoire of quick, healthy dinner ideas. You sent them in, in response to February's competition, and they make a truly mouthwatering selection.
The winner of the prize draw was Jane, who suggested a simple but delicious meal of pink grapefruit, grilled/broiled salmon served with leeks, mashed swede and green beans dressed with a dash of soy sauce, and blueberry pavlova.

Seasonal Recipes
Rhubarb Crisp or Crumble
Make the most of the tender pink stems of early rhubarb that are in the shops now. To prepare, remove leaves and roots, strip off any tough outer fibres, cut into chunks and rinse well. Toss the fruit in sugar, about 100g/1 cup to every 450g/2 cups sliced rhubarb, and leave it to macerate for a while, or even overnight.
To use in a a crisp or crumble, spread the fruit out in the base of an ovenproof dish and use the topping as given for this apple crisp recipe.
Alternatively, to serve by itself, simply stew the sugar-coated rhubarb very gently, so that it gives out its juices, until just tender. You can add orange juice for extra flavour. Serve warm or cold.
Jerusalem Artichoke/Sunchoke Soup
These delicious vegetables are nearing the end of their season, so snap them up while you have the chance and use them in theis soup recipe. It's very simple, but full of goodness and flavour. Perfect for a cool spring day.
