Happy Healthy New Year! Did you make some healthy eating resolutions? Lots of visitors to my site are planning to eat ever more healthily this year - and quite a few would like shed a pound or two as well...it's that time of year. Healthy Recipe: Warming Vegetable Chilli

Here's a simple veg-based recipe that serves 4, and is perfect for a quick meal. Try it tonight!
  • Peel and chop 1 onion and soften gently in 1 tbsp olive oil.
  • Add 1 crushed garlic clove and cook for another minute.
  • Add 2 peeled and sliced carrots, 1 chopped red pepper, 1 chopped yellow pepper, 125g (1/2 cup)canned or frozen sweetcorn niblets, 1 can pulses such as kidney beans, borlotti beans or chick peas, drained and rinsed, 1 425g (15 oz) can choppd tomatoes, 2 medium potatoes, peeled and diced.
  • Season with 1/2-1 tsp chilli powder, stir well, bring to a boil, then leave to simmer for 15-20 minutes until the carrots and potatoes are cooked.
  • Serve with brown rice, and a green salad.
