New on Healthy Eating Made Easy

How often do you scratch your head, wondering what to serve for an easy healthy dinner?

I've trawled through my recipe index and put together a useful page of Healthy Dinner Recipes where you'll find all sorts of simple, healthy ideas for quick, delicious meals. I hope it's helpful!

Beware the low fat label

I'm not a great fan of low fat versions of foods - most of the time, I'd rather have a smaller portion of the real thing, rather than a plateful of a pale imitation. And it seems that the 'low fat' label could be an invitation to over-indulge, according to research reported by Cornell University in New York, who found that people eating from boxes of chocolates marked 'low fat' scoffed nearly a third more than people who thought the chocolates they'd been given were the normal, high-fat variety. Just shows how much the way we eat is controlled by the way we think...

Peaches with Strawberry Puree

We've just enjoyed some gorgeous peaches, so despite the dismal weather here in the rain-swept UK, I am going to remain optimistic and give you this very simple little recipe for Peaches with Strawberry and Orange Puree.

Simply take one ripe peach per person, halve it and remove the stone, then slice and fan the slices out on a plate. You can skin the peaches first if you prefer, by immersing in boiling water for 20-30 seconds, after which the skins should slip off easily when nicked.

Take a box of ripe strawberries, remove stalks and puree the fruit in a blender or food processor. Sweeten to taste with a little sugar, and stir in 1-2 tbsp freshly squeezed orange juice. Spoon this puree around the peaches to serve. Delectably fruity!
