It's Easter - chocolate time!

The kids have already been hunting around the house, trying to find the secret stash of Easter eggs. Most people like to enjoy a chocolate treat or two around this time of year, and fortunately it is possible to do this, and still eat healthily.

Pasta with Egg, Ham and Peas

A light and easy dish, ideal for the longer evenings.

Chop a small onion and soften gently in olive oil. Add 300g (2 cups) thawed frozen peas (later in the year you can use fresh peas, add 1 tablespoon of chicken or vegetable stock and cook gently with the onion until tender.

Dice a thick slice of ham, weighing around 120g (4 oz), and stir through the peas until warm. Meanwhile, cook enough fettucine for four people. Finely grate 80g 3/4 cup fresh Parmesan cheese.

Beat together 2 large eggs in a warmed serving bowl, and add half the Parmesan. Drain the pasta, leaving it fairly moist, toss quickly in the bowl with the eggs and stir through the hot ham and pea sauce. Serve with the remaining Parmesan.

Variation: Add a handful of chopped button mushrooms to the onion.
